V​egetable Profile: Snap Peas (Pisum sativum)

Description

Snap peas are an All-American invention, rising from a cross between Asian snow pea and a thicker-walled variant. For generations, the crisp, plump, and sweet snap pea has been enjoyed across the country as an early summertime treat.

Nutrition

In general, all legumes provide support for the stomach, spleen, and kidneys, as well as reduce blood pressure and cholesterol. They also prevent constipation and regulate colon function.

​Storage

Snap peas can be stored in a water-tight container for up to 4 days.

Use

Snap peas are best enjoyed fresh! Dip them in a creamy dressing or hummus, toss them in a salad, or just eat them plain.
